A fight against a mother ship in the sky above a huge city, with craft weaving in between buildings could work!

yeah but that will be like z-axis gameplay and can be disorientating... you'll likely have to fly straight up, aim straight up, and shoot straight up, unless the fighters behave like they do in space and not like raptors so you can fly in loops and not have to be centered vertically...
