These default Taunt Animations can be used for every character and race.

Normal:
taunt ThroatCut = Hand to throat and pulls across throat. Or Dual Hands Across Throat.
taunt AssSmack = Puts hand to arse and smacks it. Females kiss first then smack.
taunt PThrust = Thrusts sexually.
Special:
taunt Gesture_Point = Points in the facing direction.
taunt Gesture_halt = Holds up in a halt/stop signal.

Unique:
taunt Specific_1 = Unique: Does a Flex motion for all races males except the Gen Mo 'Kai, and the Juggernaut females also Flex. All other females from any other race does an ass shake. The Gen Mo 'Kai do a 2 leg kick from one leg to the other, for both genders.
These are specific to the race.

During normal gameplay, there is a specific set of taunts that can be done. The taunt names are taken from the animation names.
On the Jailbreak celebration screen you aren't limited to any specific set of animations. This means you can use ones like WallDodgeB, which is the backwards wall dodge animation.
To find the animation names, load UnrealEd and go to the animation viewer. Click the open button and find the ukx package with your model. You can then browse through the animations to find some you like. The viewport will likely have to be repositioned.

If you play jailbreak and you kill the last player of the other team, your picture is displayed while the enemy team dies in the background. While this happens and only during this time, you can execute all animations of a character, not just the taunts (eg. crouch, walldodge, and so on).
This is a pretty big list for each character, so it's best to check for yourself which animations are funny enough to bind to keys. To do this, open up UnrealEd, then open the animation browser and finally choose an animation file (check Funkbasts list below to know which file corresponds with your character).
Watch the animations, and write down the names of the animation(s) you want to perform. Finally, open up user.ini and bind the following to a key:
<key>=taunt <whatever taunt you wrote down>
The specific key will now do that taunt whenever you killed the last player in jailbreak.

The house, obviously says "My House" as well as display the house.

For the plane, I use = speech OTHER 14 = Incoming
For the nuke = I use = speech OTHER 14 = Incoming
For the exploded nuke I use = speech TAUNT 5 = that had to hurt
It's a good idea to do them in that order too, plane, nuke, then nuke exploded. Just makes sense to me is all
Note: inorder for everyone else to see it, they have to have at least 3 lines displayed as minimum and not too big a font, or they have to manually check the chat using the tilde key and simply scroll if you're showing someone, so as to avoide spamming the chat.
Note: All these TAUNTS and Speech binds are from UT2k3, if you want to use them in 2k4, then you have to choose to correct speech number, order or whatever, you get the picture.
And don't forget, this may be considered spamming the chat if used too often. So really, only use it once in a while. For the important teamsay binds, like, "incoming speed" for BR, or stuff like that, team mates appreciate it.
And it's always good if you have a smartarse or a rude person talking or swearing, you can just push the exploded nuke and it takes up the whole 8 lines at the push of a button
..And I know this is lame, I get bagged all over the place for it, but it's fun
