Either consult the manual, or you should be able to assign your keys/buttons in the Preferences menu in the UT interface, when you start it up.

You need more than help if you continue to use the dreaded joystick..........

Come on just because he uses a joystick doesn't mean he sucks. I've met people that can kick with the right joystick (check out http://www.pantherxl.com for an example of one). Anyway, to each his own right? For the guy using the stick, you should be able to calibrate in Windows if that's what you're using. Look in the Control Panel for something called either Game Controllers or Joystick. In there it should let you calibrate and set it up. To set up the buttons, just use the Controls tab in the preferences menu inside UT. Make sure you have Joystick selected for an input device which is also somewhere on the preferences menu.

Do_or_Die is right, everyone should play like he wants to. However, I sincerely can't imagine playing an FPS with a joystick. To be honest, I even don't own a joystick. I once tried to play UT with a friend's joystick, but I really couldn't get used to it. Movelents where much slower then with a mouse, and aiming man: almost impossible.
But don't get me wrong, I don't say that it doesn't work. Perhaps with the right joystick and a good config it can be just as good as keyboard and mouse.

I've tried the joystick also and wasted about a hundred bucks on a stick as I simply couldn't configure control anything close to keyboard and mouse. That's not to say there isn't some genius out there that can't do it.
but hey, live and let die.
