In the build cube dialog box, what does the value for
wall thickness do?
Everytime I add a cube to an empty space, it seems
to be solid. If I cut a doorway into it, it's not hollow.
So I'm wondering what specifying a "wall thickness"
means?

If you choose to make a hollow cube the value entered in wall thickness will be used.
In order for it to be so you need to make sure you set hollow to true when you right click on the cube button.

The Unreal engine works with subtractive geometry. So you aren't adding things to a big void (like in the Quake engine) instead you are cutting pieces out from a big "block". (Then of course you can add things into the open areas)
If you move around stuff, edit geometry...etc you need to hit the Rebuild button in the Editor. (Otherwise it's not "updated")
