Can anyone tell me how to change the sound footsteps make. When walking on grass or gravel for instance

I dont think UT has this feature (I've never noticed it anyway)
The only change in sound is the water exit and while your walking over a shallow waterzone.

it does, but its not necessarily where you'd think to look. first of all, you can add echo and reverb effects to all sounds in an area (including footsteps) by zoning the area and adding a zoneinfo and changing bReverbZone to True to enable the effects. good for hallways or echo-ey rooms etc.
in addition, the sounds of footsteps depend on the texture you use for the floor. if you open the texture browser, choose a floor texture, right click and choose properties, you'll find in there the footsteps sound (cant remember exactly where or what its called). its different for a wood floor than for stone, etc. ive never played around with it, but as long as you dont alter the original texture packages you might as well have a go.

Errm, does anyone know where I can get a nice crunchy snow footstep sound from? :D

Aphex, dont know how you feel about using sounds from other games, but ds9 the fallen has snow-crunching sounds and, of course, it uses an unreal engine.
