I have this long drop that won't kill players. Is there a way to define a brush or surface to kill a player?

I used to think it was done with a big flat zone portal and a killzone below, but that's not so.
Open up DM-Peak and have a look:
About halfway down the mountain, you'll find killallactor objects. [ok, they may not be called exactly that, I can't remember but you get the idea. They are just icons like the ones for an ambient sound, a trigger etc]
It's best to look for them in a side-on view. Open up the actor property box, put it to one side, and click on actors that are around there, and the actor property window's title will tell you what you have selected.
Once you've found one, switch to top view, and right-click on that viewpane's title bar. Select View>radius view (again, without it in front of me I may have the minor details wrong)
It will then show a BIG red circle around the kill actor.
If you find the others, you'll see they've been set up all the way round the mountain, and the red circles overlap.
I doubt you'd be able to rocket jump your way past their radii and to land at the bottom of the box still alive!
This way doesn't use any brushes or polys, so I presume it's better for game speed.

A CloudZone will kill the player instantly. It's subclassed under ZoneInfo as a preset.
CloudZones will destroy any actors that enter it, so another good use of a CloudZone is to absorb weapons fire before it has a chance to splat against the levels ceiling (and reveal the limits of the level).
