What files do I copy from the OLD hard drive to keep my player statistics, what levels completed, and so forth? It's not real obvious...

Two Factor Authentication is now available on BeyondUnreal Forums. To configure it, visit your Profile and look for the "Two Step Verification" option on the left side. We can send codes via email (may be slower) or you can set up any TOTP Authenticator app on your phone (Authy, Google Authenticator, etc) to deliver codes. It is highly recommended that you configure this to keep your account safe.
I'd suggest doing a regular full installation of UT from scratch, on your new HD. Then just copy all the files from the UT system folder in your old HD overwriting the files in your new installation. I'm presuming that your old installation was working perfectly.
for ngstats just copying the ngstats folder will suffice. for saved game info, thats in your unrealtournament.ini in the /system folder
